What are Ramps?

Ramps (commonly known as spring onions, wild leeks, or wild garlic) are one of the first signs that Spring is upon us. They are a North American species of wild onion that grow from the southern-most part of the Appalachian Mountains as far north as Quebec. Ramp season is short, starting from the end of February to early June. With a small white bulb and hairy root, they resemble a scallion but with more of a bold garlic-onion flavor. Because their season is short and flavor is considered a delicacy amongst chefs everywhere, the demand increases each year.
